We make all our mustard using our small batch process to ensure that each batch is of the highest quality.  We start our mustard with a creamy dijon style base, which allows us to impart each of our mustards with the chosen flavor, whether it be horseradish, roasted garlic, dill, or the original walla walla sweet onion mustard.

We use three different types of ground mustard, each providing a different flavor profile as well as texture.  Our Beer Mustard, as well as several others, uses a stone ground mustard product that adds a little texture, flavor, and some heat.  Our AJ’s Walla Walla Sweet Onion Mustard with Whole Seeds, is a customer favorite and uses whole mustard seeds which add a nice crunchy texture.  Whole mustard seeds provide a more robust flavor profile.  Many of our products use a standard ground mustard flour that provides a nice smooth texture.
